Antique Cookery Print. Decorative desert Dishes from La Cuisine Classique by Urbain Dubois. (26 May 1818 – 14 March 1901)

Dubois was the son of a French master weaver who trained as a chef by working in the kitchen of his uncle's hotel. In 1840, Dubois moved to Paris but in around 1845, he started to travel, working as a chef in several countries in central Europe before becoming chef to Prince Alexey Orlov, an ambassador for Nicholas I of Russia. In 1860, he became chef in Berlin to the Prince regent, William of Prussia. At the start of the Franco-Prussian War in newest 1870, he returned briefly to France but after the peace treaty, in March 1871, he went back to his position of head chef with the Hohenzollern family which he shared with his compatriot, Émile Bernard, with each being responsible for the cooking on alternate months. This arrangement gave Dubois time for writing. He remained in Berlin until 1880.

The sizes are approximate: 11 3/4 x 9 inches. (30 x 23 cm). Plate mark size 11 1/4 x 8 1/4 inches. (28.5 x 21 cm).

It was hand coloured by us here, in our studio in Wiltshire, England.

The condition is excellent. The paper is a nice white colour, and the watercolours are bright. There is some slight dustiness in the borders. There are the remains of an original paste line down the left hand side, where it was bound in the book.
